Raw products such as carpaccio, tartare, sashimi, sushi and poke made with farmed fish have been checked using a procedure unique in Italy and approved by Milan's ATS health authority. Using machines patented by Nordfish, this procedure allows the fish to be eaten without prior cooking and/or freezing, as every portion is checked individually. The flesh therefore retains its juiciness, texture and colour, unlike frozen fish, which releases water and nutrients and can look pale and dull.
